Banana Bread

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 2 eggs, beaten
  • 1½ cups mashed ripe banana (about 5)
  • 1 cup sugar
  • ½ cup melted butter
  1. Preheat oven to 350℉ and grease a 9x5x3 inch pan, after greasing pan place parchment paper in the pan ( this makes it easier to cut and serve) and set aside
  2. In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg set this mixture aside
  3. In a medium bowl combine eggs, banana, sugar, and butter. Add this mixture to the dry ingredients and mix until the batter is moistened (it will be lumpy) pour the batter into the prepared pan
  4. Bake for 40-55 minutes times may vary or until a toothpick inserted in the middle comes out clean
  5. Let cool in pan for 15 minutes then remove, finish cooling on a rack, wrap in cling wrap overnight, and enjoy the next day
